Happily cooking adisaster my dinner while I type thinking it's OK to eat red meat once in a blue moon cause I need some protein and wondering...

Yours looks normal...the first is a la food-stylist/photoshop...
If you like it medium-rare (too many asides to make on that), broil it for about 8 minutes a side (depending on thickness) until the internal temp is 135. Take it out and let sit for about 5 minutes

Charles - Well, it smelled good. And that's all I'm gonna say about that.
You really must stop with this cooking! If you want a fancy meal, go to a restaurant. It's the patriotic thing to do -- spending money, letting professionals do what they do best, will help this economy finally emerge from Recession. Really, if you love you country, you will stay out of the kitchen! (That's how I rationalize my complete lack of domestic dexterity. How does it sound?)
I think I like your rationalization. I will try it.
