A Cool Summer Recipe from Queen Mimi and Her Crazy Facebook Friends

(but I mean crazy in the fondest way)
So, in my usual "Good morning Facebook people" fashion I announced this on my timeline. 

Proud.as.punch that I'd "cooked" this last night, opened the door to the fridge this morning and found it still alive.


Only to be met with..

And Janice, just because you have your own cooking blog(s) and can make a corn tortilla from scratch and caramelize onions doesn't mean you can cook orange salad.  I know how to pick corn too ya know.



My masterpiece
I have no idea why there is a spoon dent in the side of the bowl.



RECIPE: Mix 1 box of orange jello (or any color) with 1 carton of cottage cheese. Fold in 1 can of (drained) mandarin oranges and 1 can of (drained) chunky pineapple. Set aside a few pieces of fruit for garnish. Add 1 carton of fat free cool whip. Mix all. Decorate with fruit. Cover and refrigerate. It settles into a thickness that is yummy. I use lowfat ingredients and sugarfree jello.

I just did a chicken salad with coconut, pineapple, sliced almonds, and green onions with a dressing of mayonaise, horseradish, hot mustard.
